Introduction

Levain and Cherry is an independent French bakery founded by chef-turned-baker Pascal during lockdown. Known for its sourdough loaves, viennoiserie, and inventive specials, the business quickly outgrew its original site in Kings Heath. Pascal needed a larger kitchen, better equipment access, and a welcoming space that reflected the quality of his craft. The new location in Stirchley offered the square footage – but needed a complete fit-out to get bakery-ready.

Our Solution

We delivered a full internal refurbishment tailored to Levain and Cherry’s workflow and customer experience. Pascal wanted an open-plan layout that would bring customers closer to the baking process, with efficient prep and storage areas behind the scenes.

Services Delivered:

  • Internal building refurbishment

  • Electrical and plumbing upgrades for commercial kitchen use

  • High-spec finishes to support a food-safe environment

  • Front-of-house layout focused on natural light and warmth

  • Practical back-of-house design with added storage and prep space

Our Building Services team worked closely with Pascal throughout the project, minimising disruption and ensuring the space was operational on time.

We Delivered

  • A full fit-out of a new unit at 1257 Pershore Road, transforming a blank space into a fully functioning bakery

  • Efficient turnaround, coordinated directly with the business owner to reduce downtime and avoid delays

  • Tailored design that supports both the day-to-day needs of a working bakery and the customer experience

  • Support throughout, with our project manager on hand to simplify the process and take pressure off the client

The Impact

The new site has already become a go-to destination for locals and loyal customers from across the city. With increased kitchen capacity, Pascal has expanded the menu to include hot drinks and a wider range of sweet and savoury options – including vegan specials.

Customers now enjoy an inviting, functional space designed around the product and the people behind it.

"Working with Ed at Premier took a lot of the stress off my shoulders. I had a clear vision, and they made it happen. We couldn’t be happier with how it turned out.”"
